Grilled Peacy-burrata-frizzled Prosciutto Salad

This recipe serves 4

* oil of your choice 

* 1-tablespoon brown sugar 

* 1 tablespoon melted butter (optional) 

* 1 tsp. chopped chipotle chilis in adobo (optional) 

* 2 ripe/not over ripe peaches halved and pitted 

* 1 container burrata 

* 1 package of your favorite salad greens 

* 1 package purchased prosciutto slices

Mix first 4 ingredients and brush on cut side of peaches before placing them cut side down on the grill. Grill just long enough to give them great grill marks and that great grill flavor. Brush again with mixture.

For the salad, add one container of burrata, drained,  in the center of a family style platter. Next, lightly toss your favorite greens in a light vinaigrette, (I prefer just lemon and EVOO for this), and place them around the sides of the cheese. Place grilled peaches, grilled side up on the greens. Add fresh OR baked prosciutto pieces** to the platter as a crunchy, flavorful garnish.

**To bake the prosciutto slices, simple preheat your oven to 400 degrees. Place prosciutto slices on a cookie sheet, covered with parchment paper or foil. Bake until in becomes-“prosciutto bacon”. (About 10 minutes) Let cool. Then gently lift the crunchy goodness from the cookie sheet and place on salad platter to garnish.
